Apprentices from the Rick Stein Academy at Truro and Penwith College, handled the heat in the kitchen to prepare a mouth-watering lunch for head chefs and management staff.

The apprentices created the menu from dishes served in their workplace as well as recipes from Rick Stein’s books.

The lunch was arranged to showcase the learners' progress, and coincided with the ten-year anniversary of Rick Stein’s Seafood Restaurant in Padstow.

Tamsyn Harris, head of business at Truro and Penwith College, attended the lunch and said: “It was amazing to see how far the young chefs have come since the start of the apprenticeship to prepare such a feast of Rick Stein dishes with mouth-watering presentation and fantastic flavours. The range of dishes was impressive from mussels to mackerel, hake to curried cauliflower, and gnocchi. My personal favourites were the crab linguini and the hot chocolate fondant.”

The apprentices showed off their newly acquired skills from their apprenticeship and presented a large range of fish, meat and vegetarian dishes, as well as a hot chocolate fondant, coffee sauce, chocolate crumb and vanilla ice cream desert.

Tamsyn Harris added: “The Stein's Academy is a really important partnership for Truro and Penwith College and it is great to see the chefs of the future take their first strides producing food of this quality.”
