The owner of St Keverne Bakery is due in court this morning facing a number of alleged hygiene failures, including that "unsafe" food went on sale.

Simon James Phillips, of Porthallow, is due to appear before magistrates in Truro on Wednesday charged with contravening or failing to comply with a number of EU hygiene regulations at the bakery on the Treskewes Industrial Estate, including that "food was placed on the market that was unsafe."

He is also facing charges that fittings and equipment that food came into contact with were not effective cleaned and, where necessary, disinfected "at a frequency sufficient to avoid risks of contamination;" that the layout, siting and size of the bakery did not permit good hygiene practices, including protection against contamination and in particular pest control; that the bakery was not kept clean and maintained in good repair and condition; and that food handlers were not supervised and trained in food hygiene matters corresponding to their work.

Further charges are that food waste, non-edible by-products and other refuse was not removed as quickly as possible to avoid accumulation in rooms where food was present; and that permanent procedures based on hazard analysis were not put into place, implemented or maintained.

Also facing the same set of charges is HEP Lifestyle Limited, a private limited company of which Mr Phillips is listed as a director and secretary on Companies House, although it is listed as dissolved on February 20 this year.

The company faces a further charge that adequate procedures were not in place to control pests.
