FOOD fans in Falmouth will be licking their lips at another new restaurant adding its weight to the port’s enviable culinary reputation.

Matthew and Ceri Unwin-Springett last year moved to Cornwall with their four children and took over Oliver’s in the town’s High Street - one of Falmouth’s best-loved restaurants.

With their feet now firmly under the table they have just relaunched the eatery under the new name: Restaurant Four, which serves casual lunches and fine-dining dinners with a continually-changing menu.

“Ever since I started out at 15 as a pot-wash at my local eatery it has always been my dream to open my own restaurant,” said chef Matthew.

“With the dedication and love of my family my dream became a reality last year. We took over Oliver's in June and, after a brilliant first six months, took the plunge to change the name to Restaurant Four for the new year.

“Food has always been my passion and I hope that this shines-through in my cooking. I believe in good, honest ingredients speaking for themselves."

His menus regularly include fresh seafood and shellfish caught just metres away, foraged delicacies and home-grown fruit and vegetables.

Mains include contemporary takes on freshly-caught fish, game and tender cuts of locally-farmed meats served in new and innovative ways with a style and dedication to detail that is hard to emulate.

There are always vegetarian options available and the restaurant is happy to cater for all dietary requirements.

Desserts are no afterthought, with sound technical skill which is obviously apparent. There is a wide range of drinks ranging from county beers to a serviceable wine list with decent options by the glass. A wide range of tantalising cocktails is also available.

Ceri added: “Matthew loves nothing more than to be creating things from fresh, locally-sourced produce that will put a huge smile on the customer’s face. We’re both massive foodies. I enjoy being at the front-of-house to make sure everyone is comfortable so they are free to enjoy the ambience and food.

“We want everyone to have a brilliant time here, whether it’s a quick lunch while you hide from a rain shower or a lingering evening for that special occasion. We would love to be known for not only the food, but also for the professional and welcoming hospitality that we provide.”
