A HOTEL in Truro has announced the arrival of a new head chef to its team.

The Alverton, a converted convent nestled on the outskirts of Truro, Cornwall, has named a new Head Chef.

Ollie Wyatt, formerly Sous Chef at Michael Caines’ The Cove, will look to continue to advance the menu as well as committing to community involvement, at the two AA Rosette award-winning restaurant.

With over 10 years of experience, Ollie’s style of cooking showcases his passion for using high quality, locally sourced ingredients, from Cornish land and water, straight to the plate.

From the chicken terrine dish to the pork tomahawk served with Hasselback potatoes, sweetheart cabbage, apple jus and apple puree, Ollie is emphasising The Alverton's ethos and continuing to work with excellent local producers.

As well as adding new dishes to the menu, under Ollie’s eye, the restaurant will be introducing some intimate tasting experiences, with one of the first being a ‘Taste of Truro’ Game Evening on 24th November.

Ben Young, Managing Director at The Alverton’s parent group, The Cornwall Hotel Collection, said: "We’re really looking forward to Ollie’s presence continuing The Alverton’s reputation for dining, as we go above and beyond to provide the very best of Cornish cuisine for our guests.

"It’s an exciting time for us as we continue to develop our menu and our team to match the demand for good food and hospitality in Cornwall.”
