A seafront resort in Falmouth has opened the doors to its brand-new all-day dining restaurant, with a Cornish boy heading up the kitchen.

Nourish is the new restaurant at the St Michael’s Resort on Falmouth seafront with new head chef Darren Kerley.

Darren was born and raised in Redruth, Cornwall, before starting his career at the Dorchester Hotel.

His culinary career took off during his formative period working under Marco Pierre-White at Le Manoir Aux Quat Saisons and with pioneering chef Alain Senderens at Luca Carton in Paris.

Returning to Cornwall, Darren was instrumental in designing the food concept at celebrated Cornish restaurant, Sabzi’s, and has stayed in Cornwall ever since.

Kerley now joins St Michaels Resort in a move to develop and grow the hotel’s culinary offering following a stint as Head Chef at Hotel Meudon.

The hotel said his food philosophy centres on purity: “elevating quality, individual, seasonal ingredients with a plant-focused flair, which is where the concept of Nourish was born.”

Kerley says, “I am thrilled to start my position as Head Chef at St Michaels Resort and launch Nourish as the hotel’s newest dining concept. Honest, quality produce is at the heart of my cooking and I am proud to showcase the very best of the region, and the true spirit of Cornwall.”

The new restaurant showcases the flavours of his home-county of Cornwall, making his culinary mark on this luxury seaside hotel.

The hotel says the Nourish team works closely with local farmers, brewers and distillers to showcase the best of Cornish produce and the abundance of Cornwall's land and coast – provenance is king.

“The restaurant offers diners ‘Cornish tapas’, bringing together the best local ingredients in a convivial, shareable format - the dishes are bright and soulful, yet healthy and balanced, offering plentiful options for a wide range of dietary requirements.

“Vibrant salads and flavourful shawarmas will be front and centre on the menu, and a wood-fired pizza oven adds a rustic charm to this laid-back restaurant, offering hand-made artisanal pizzas with a selection of toppings, for the ultimate nostalgic comfort meal.”

The bar team at St Michaels Resort has curated a menu of local gins such as Tarquin's Gin and Loveday Gin and selected premium wines from Knightor Winery, it says, which showcase the best of the Cornish botanicals grown in the surrounding landscapes.
