Cornish Bakery is to create jobs in Falmouth as it opens one of the first sites under its new RISE bakery-and-dining concept in the town centre.
The Cornwall-based business is taking on a prominent three-storey historic building on the main shopping street, overlooking the water, and turning it into a 92-seat licensed bakery and restaurant-style space designed to trade from early morning into the evening.
It currently has a site at 7 Arwenack Street as well as at Boscawen Street in Truro as well as just over 70 outlets in the UK.
The company says the move marks a significant investment in the town and underlines the company’s strategy of targeting busy destinations with strong year-round footfall.
The Falmouth opening sits within a wider expansion that will see Cornish Bakery launch six new sites by May 2026 and debut the RISE format in three locations across the UK.
The concept is described by the company as the “next evolution” of the brand, building on its existing coastal and market-town bakeries but with larger footprints, extended trading hours and a stronger emphasis on hospitality.
Founder Steve Grocutt said RISE is intended to “reshape hospitality” and give each bakery a deeper role in its local community, rather than operating purely as a grab-and-go offer.
“The RISE concept represents a significant opportunity for us to reshape hospitality, driving a new direction and our shared mission to provide a bakery for the community, everywhere we go,” he said.
“We’ve always believed bakery is the new coffee shop – now we’re proving it can be the new neighbourhood restaurant as well.
“In Falmouth we want people to start their day with coffee and a croissant, stay for a proper lunch, and feel just as comfortable coming back in the evening for small plates and a glass of wine.”

RISE sites will be substantially larger than a typical Cornish Bakery, with broadened food and drink menus and more space set aside for customers to dwell, work and socialise.
In Falmouth, the three-floor layout will include dedicated areas for interactive art exhibitions and presentations, with the company flagging plans to use the building for events, talks and classes outside core trading hours.
The menu will expand on the brand’s familiar range of Cornish pasties, sausage rolls, viennoiserie, cakes and speciality coffee to include an all-day selection of small plates for breakfast, brunch, lunch and early evening dining, paired with local beers, ciders and wines.
Mr Grocutt said the licensed format and event space are designed to help the bakery become part of the town’s social fabric.
He added that opening one of the first RISE sites in Falmouth carries particular weight for the business given its Cornish roots.
An exact opening date for the new store has yet to be confirmed, but fit-out work is under way and recruitment for the new team has begun.
