A restaurant near Truro has recruited a new executive chef after its record-breaking opening weekend towards the end of May.

With the easing of COVID-19 restrictions on hospitality over the past few months, The Punchbowl and Ladle restaurant at Penelewey has built open its impressive opening weekend with the hiring of a new executive chef, Tom Waller.

During its opening week, the restaurant served over 900 pints of draught beer, 106 bottles of wine and 897 main meals.

Having been given a new lease of life thanks to husband and wife duo, Rachael and Roan Spring, the team at The Punchbowl and Ladle has also, with the help of new chef Tom, given the menu a shakeup to draw on the best of British and Cornish cuisine.

The pub is also home to a new outside seating area that’s set to feature year-round pop ups kitchens.

Newly appointed Executive Chef, Tom Waller has held positions at some of the best kitchens across the UK, notably Michelin starred Bohemia Bar & Restaurant in Jersey.

With a passion for seasonal produce, Tom will take up the role of Executive Chef, and be in charge of a regular menu change, which will see a variety of different flavours throughout the year.

Sitting alongside the food menu will be a series of locally inspired drinks plus an extensive wine list.
